Mexican Discada prepared on a disco “deesco”, aka plow disc cooker aka Cowboy Wok. Ingredients: bacon, chorizo, onions, pork, beef, smoked sausage, ham, chile peppers, tomato and corn tortillas. We forgot the ham! Maybe next time. The plow disc cooker came from Maverick Fabrication out of Fort Worth. http://www.maverickfab.net/ The lid came from a local restaurant supply. It’s a 24″ lid for a 140 qt stock pot.
