A WEEK OF VEGAN BREAKFASTS | Cafe-Inspired Brunch Recipes 🥑🌮🥥

Hello my beautiful friends!! I hope you enjoy this video and it provides you with some awesome plant-based breakfast inspo 🙂

1. Avocado Toast
– 2 pieces of bread, toasted
– 1/2 an avocado
– juice of 1/2 a lemon
– pinch of pepper
– 1/2 tsp pink salt
– vegan cream cheese (as desired)
– 1 tsp shallots
– 1/2 tsp sesame seeds
– snow pea sprouts, to serve
– a wedge of lemon, to serve

2. Choc-Chip Pancakes
– 3/4 cup soy milk
– 1/2 tbsp apple cider vinegar
– 1 cup plain flour
– pinch of pink salt
– 1 tsp baking powder
– 1/4 cup brown sugar
– 1 tbsp oil
(I recommend topping with your favourite nut butter and fresh fruit :))

3. Tofu Scramble
– 2 cloves of garlic
– 1 tbsp shallots
– 1/4 cup nutritional yeast
– 1/4 cup soy milk
– 1 tsp sweet paprika
– 1/2 block tofu
– 1/2 tsp pink salt
– pinch of pepper
– 2 tsp olive oil
– 3 small pieces of toast

4. Breakfast Tacos
Guac:
– 1/2 avocado
– juice of 1/2 a lemon
– pinch of salt
– pinch of pepper
Fresh Salsa:
– 1/4 tomato
– 1.5 tbsp shallots
– 1 clove garlic
– juice of 1/4 lemon
Chickpea Scramble:
– 1 cup chickpeas
– 1/3 cup nutritional yeast
– 1/3 cup soy milk
– pinch of salt
– pinch of pepper
(I recommend serving on 3 soft tacos, with a drizzle of aioli and sesame seeds and sprouts :))

5. French Toast
– 1/2 cup plain flour
– 1 cup soy milk
– 2 tbsp rice malt syrup
– 1 tsp vanilla
– 2 tsp flaxmeal
– 3 pieces of bread (sourdough or pane di casa works best)
(I recommend cooking in vegan butter and serving with fresh fruit and a drizzle of maple or rice malt :))

6. Acai Bowl
– 1 tbsp soy milk
– 1 tbsp almond butter
– 1 tbsp vanilla protein
– 1 frozen banana
– 1/4 cup frozen raspberries
– 1 sachet acai pure
(I recommend serving with granola, nut butter and fresh fruit :))

7. BLAT
Rice Paper Bacon:
– 3 sheets of rice paper
– 2 tbsp olive oil
– 3 tbsp bbq sauce
– 1/2 tsp salt
– 2 tsp nutritional yeast
– 2 tsp paprika
– 1/2 tsp pepper
Baked at 190 degrees for 10-12 minutes
For the rest of the sandwich:
– 1/4 avocado
– 1 tbsp vegan aioli
– 4 thin slices tomato
– 2 pieces of cos lettuce
– 2 pieces of bread, toasted
(I recommend topping with shallots, sesame seeds and sprouts :))
