SWEET POTATO CURRY:
– 2 Sweet Potatoes
– 2 Onions
– 2 cans of chopped tomatoes
– 1 curry spice mix
– 1 can of chickpeas
– 1 can of coconut milk
– 200g spinach
SAUSAGE CASSEROLE:
– 8 quorn sausages
– 2 red onions
– 4 cloves of garlic
– 1 can of sweetcorn
– 1 can of chopped tomatoes
– 20ml red wine
– 200g passata
MUSHROOM BOLOGNAISE:
– 300g chestnut mushrooms
– 2tbsp tomato puree
– 1 can of chopped tomatoes
– 1 vegetable stock cube
– 1 white onion
– 2 celery sticks
– 2 garlic cloves
– 10ml red wine
– 2tbsp balsamic vinegar
– 1tsp oregano
