How to Brunch at Home! Easy, Healthy + Inexpensive

SMOKEY POTATOES
+ 1 lb Mini Yellow Potatoes
+ 1 lb Mini Red Potatoes
+ 1 Medium Onion Sliced
+ 1 tb Olive Oil
+ 1 tb Garlic Powder
+ 1 tb Onion Powder
+ 1 tsp Smoked Paprika
+ 1-2 Springs Rosemary
+ 1 tb Honey, Agave or Maple Syrup
+ Salt
+ Pepper

Mix ingredients. On a baking foil lined baking sheet, spray nonstick olive oil spray and spread out potatoes and bake at 350F for 35-40 minutes

EGG CASSEROLE
+ 2 oz Mushrooms
+ 5 oz Onions
+ 2 Eggs
+ 8 oz Plain Greek Yogurt
+ 1tb Chia Seeds
+ 9 tb Shredded 3 Cheese Blend
+ 22.50 tbsp 100% Egg Whites
+ 1/3 cup, Oat Flour
+ 1/3 tablespoon Oil – Olive
+ 16oz Koch’s Turkey Smoked Sausage
+ 2 Cloves crushed garlic
+ Garlic Powder
+ Salt
+Pepper

Cook sausage in a pan, set aside. Spray pan with nonstick spray and add garlic and onions. After 2 minutes add in Mushrooms, cook for 3 minutes.

In a mixer ( I used a vitamix ) Blend Eggs, Egg Whites + Yogurt. Then Add in Oat Flour + Chia Seeds, Blend. Lastly add spices and Blend.

In a Pre-sprayed baking dish ( 9×13) Evenly spread Turkey and Veggie mix. Pour Egg Mix over. Lay Spinach on top, and sprinkle with cheese. Sprinkle garlic powder on top. Bake at 350F 30-40 minutes or until golden brown on the top and no signs of liquid.
