Oil
1/2 Chopped White or Yellow Onion
3-4 Potatoes chopped in chunks
2 Garlic Cloves finely chopped
3-4 Roasted and peeled Anaheim Peppers (Poblano or Green bell pepper will also work)
4 Cups Water
2 Tablespoons Chicken Boullion
1/2 Can Tomato Sauce (or 3 oz)
10 oz Queso Fresco Or your favorite cheese
1/4 Teaspoon of Mexican Oregano
Pepper to taste
1/2 Cup of warm Heavy whipping cream or your choice of milk
