Cashew chicken. One of those dishes that are more popular in Thai restaurants overseas than in Thailand itself, but it is a real Thai dish and it’s a crowd pleaser. I make it all the time because it’s my husband’s fave and it’s quick and easy.
In my book Sabai there is a salmon version too. I change veggies all the time but the classic veg are bell peppers and onions.
