Today we’re making these loaded tater tots that are packed with melted cheese and delicious crunchy bits. They’re a perfect New Year’s Appetizer to make for a party.
20-30 frozen tater tots
1/3 cup cheddar cheese, shredded
1/4 cup sour cream
2 slices bacon, cooked and crumbled
Chives, sliced
Preheat the oven to 450ºF. Grease the cups of a mini muffin pan.
Place 2-3 tots in each muffin cup.
Bake for 10 minutes. Remove the pan from the oven and let cool slightly.
Mold the tots into cups inside the tray. You can do this by pressing a small flat object into the tray and twisting to force the tots up the sides. Return to oven; bake for 15 more minutes.
Add cheese to each potato cup. Bake for 4-5 minutes, until the cheese has melted. Transfer to a serving platter. Top with sour cream, bacon bits, and chives.
