Jaju is a traditional Bhutanese soup from the Himalayas, made with simple ingredients like dairy, garlic, greens, chilies, and spinach. Light, creamy, and deeply comforting, it reflects Bhutan’s love for sustainability, where even leftover buttermilk becomes the star of a nourishing dish. Rustic, soulful, and soothing, Jaju truly feels like a warm hug from the mountains.
Ingredients:
500 ml Cow Milk
1 bunch Spinach (shredded)
2-3 tbsp Butter
1 tbsp Garlic (crushed)
¼ cup Spring Onion Greens
½ tsp Chilli Flakes
