Ingredients:
1 Wheat Flour Tortilla (homemade or store-bought)
1/2 Red, Yellow, and Green Bell Peppers (sliced)
1/2 cup Black Beans (drained and rinsed)
1/2 cup Shredded Cheese (cheddar or Mexican blend)
1/2 tbsp Olive Oil
1/4 tsp Chili Flakes (for spice)
1/4 tsp Za’atar (or your preferred spice blend)
Salt & Pepper to taste
Instructions:
1. Sauté Veggies: Heat olive oil in a pan. Add the sliced bell peppers and cook until soft, about 3-4 minutes.
2. Season: Stir in black beans, chili flakes, za’atar (or your favorite spices), salt, and pepper. Cook for 2 more minutes.
3. Assemble Quesadilla: Place the tortilla in the pan. Add the veggie-bean mix and top with shredded cheese. Fold the tortilla in half.
4. Cook: Flip after 2-3 minutes, cooking until both sides are golden and crispy.
5. Serve: Cut into wedges and enjoy with salsa or guacamole!
