Quick,easy,savoury lunch with 50+g protein🌮🍗✨
Hei lovelies,
today I will share with you my go to quick chicken quesadilla recipe,for the days that I know I don’t eat enough protein because of my time. If you want the recipe to be quicker,you can leave the roasted veggies and instead use fresh ones, so that you don’t have to wait for them.🤎 This is NOT a classic quesadilla version, just one that I came up with.💕
🌮Ingredients for the chicken marinade:
20g crème fraîche
20g tomato paste
10g mustard
thyme,basil,salt(and if you have some Italian spice mix)

🌮Ingredients for the sauce:
50g Greek yoghurt
1 garlic clove
10g mustard
fresh parsley and dill
garlic powder and salt

🌮Remaining ingredients:
1 tortilla
30g cheddar
30g tomato sauce( I use pizza sauce because it’s already seasoned)
broccolini
mushrooms
asparagus
(Of course you can use what veggies you prefer)💚

🌮Instructions:
Wash the veggies and season them well. Clean them off the leaves and add them on a baking tray/airfrier. Season them with some garlic powder,basil,pepper and salt,thyme and paprika powder. Airfry them 10 min at 195°C and after that 10 min at 150°C. (If you use an oven, I would say 20 min at 170°C).
In the meantime prepare the marinade. Mix togheter the ingredients and add the chicken. Cover it well in the marinade and fry it in a pan with some olive oil for about 5-7 min on each side at medium temperature.
For the yoghurt sauce,add the yoghurt and mustard in a bowl. Add the diced garlic,dill and parsley. Season it after you taste with salt and garlic powder.
When the chicken is ready. On half of a tortilla add your tomato sauce,then add some cheese,chicken, cheese and cover it with the other part of the tortilla. Fry it on each side for 2-3 min on medium-high heat until the cheese melts.
When the quesadilla is done,plate everything and if desired add some hot sauce for an extra kick. Hope you will try it out!
