Kerala Style Chicken Roast Recipe: A Spicy Delight

500g boneless chicken, cut into bite-sized pieces
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
Salt, to taste
1 tbsp ginger-garlic paste
For the Roast:

3 tbsp coconut oil
2 onions, thinly sliced
2-3 green chilies, slit
1 sprig curry leaves
1-inch piece of ginger, julienned
Salt, to taste
Instructions:

In a deep frying pan or kadai, heat coconut oil over medium-high heat.

Once the oil is hot, add Onions and Curry Leaves:

Add thinly sliced onions and curry leaves to the pan. Sauté until the onions turn golden brown and translucent.
Add Green Chilies, Garlic, and Ginger:

Stir in the slit green chilies, minced garlic, and julienned ginger. Cook for a few minutes until the raw smell disappears.
Add Chicken:

Add the masala powders and chicken to the pan and cook on medium-high heat. Stir occasionally to prevent sticking.
Cook Until Chicken is Tender:

Cook the chicken until it is tender and has a slightly crispy texture on the outside. This should take around 15-20 minutes.
Spice it Up:

Sprinkle red chili flakes into the pan and mix well. Adjust the spice level according to your taste.
Serve Hot:

Kerala Style Chicken Roast is traditionally served hot, garnished with fresh curry leaves.
