In this easy-to-follow tutorial, I’ll show you how to make a delicious pork stew in peanut sauce, known as “Pork Kare-Kare”. This easy classic Pinoy dish pays homage to the rich and vibrant flavors of Filipino food that my Mama used to make; My Mama usually makes with a leg (pata) of a pig (baboy), but in this simple recipe, I used common ingredients you can easily get in a grocery store. To make this simple pork Kare Kare recipe, you will need the following tools:

Slow Cooker
Frying Pan
A wooden spoon for stirring
Kitchen Tongs
A knife for cutting vegetables
A cutting board

Ingredients For Pork Kare Kare Recipe

Now let’s move on to the ingredients for this pork Kare Kare recipe. Here’s what you’ll need:

3 lbs of Pork Shoulder
3 tablespoons of Cooking Oil
Salt and pepper to taste
6-8 cloves of Garlic
1 tbsp Ginger
1 medium Onion, chopped
1.5 cups of Chicken Broth
1/4 cup Soy Sauce
1/4 cup Lemon Juice
1/2 cup of Peanut Butter
How To Make Pork Kare Kare Step-by-Step Guide

Now, let’s get into the step-by-step guide on how to make this delicious pork Kare Kare:

Prepare the onion by dicing them into small pieces. Set aside.

Peel the garlic and ginger and turn them into a paste using a mortar and pestle.

Cut the pork shoulder into large square pieces. Season them with salt and ground black peppter.

Heat cooking oil in a large pot over medium-high heat. Cook the pork for 4 minutes a side or until it is browned. Cook only on 2 sides; you’re only trying to get more flavor at this stage. They will fully cook in the slow cooker. Cook the pork in batches to avoid overcrowding them.

Once the pork is nicely browned, place them in the slow cooker.

In the same pot, sauté the garlic, ginger, and chopped onion until fragrant.

Pour in the chicken broth, soy sauce, and lemon juice, and bring to a boil.  Scrape the crispy bits off the bottom of the pan with a metal spatula as they add more flavor.  Once the liquid starts to boil, pour the mixture into the slow cooker.  Mix all around until well combined. 

Cover and cook on low for 4 -5 hours.

After 4 hours, check the tenderness of the pork.  If they are tender to your liking, add the peanut butter to the pot and stir until well combined and the sauce has thickened.

Turn off the slow cooker and partially cover it to thicken up the liquid for 15-20 minutes before serving.
