Here’s my recipe chart for Restaurant-style Chicken 65:

**Ingredients:**
– Boneless chicken 500g
– Curry leaves 2-3 sprigs
– Garlic 5-6 cloves
– Ginger 1/2 inch
– Onion 1 medium-sized
– Tomato purée/paste (homemade or store bought)
– Green chilies 3-4
– Red chili powder 1 tbsp
– Turmeric powder 1 tsp
– Garam masala powder 1 tsp
– Coriander Powder 1 tbsp
– Black pepper powder 1 tbsp
– Salt 1 tbsp
– Sugar 1 tsp
– Soy sauce 2-3 tbsp
– Yogurt 2-3 tbsp
– Rice powder 2-3 tbsp
– Chinese salt (monosodium glutamate) 1 tsp
– Corn starch/flour 3-4 tbsp
– Cooking oil of your choice (2 cups for frying and gravy mixture)

**Chicken 65:**
1. Cut the boneless chicken into bite-sized pieces.
2. Marinate the chicken with ginger, garlic, green chilies, red chili powder, turmeric powder, garam masala powder, black pepper powder, salt, yogurt, and a dash of soy sauce. Let it marinate for at least 30 minutes.
3. In a bowl, add the marinated chicken, rice powder and corn starch/flour.Coat the marinated chicken pieces with this mixture.
4. Heat oil in a deep pan for frying. Once the oil is hot, fry the chicken pieces until they are crispy and golden brown. Remove and drain on a paper towel to remove excess oil and repeat the process (frying twice)

**65 Gravy:**
1. In a separate pan, heat some oil. Add chopped onion, garlic, ginger, green chillies and curry leaves. Sauté until translucent and fragrant.
3. Stir in tomato paste and cook for a few minutes.
4. Add red chili powder, garam masala powder, black pepper powder, salt, and 1 tsp of sugar. Cook the spices with the tomato mixture until the oil starts to separate.
5. Add a splash of soy sauce and Chinese salt for flavor enhancement. Adjust the seasonings according to your taste.
6. If the gravy is too thick, you can add a bit of water to achieve the desired consistency.
7. Finally, add the fried chicken pieces to the tomato gravy. Mix well so that the chicken pieces are coated with the gravy.

**Serve:**
Garnish with some chopped curry leaves and green chilies. Serve your Chicken 65 hot, accompanied by steamed rice, roti or as an appetizer.
