Here is a quick and easy recipe for Soya Chilli:

Ingredients:
– 1 cup soya chunks
– 1 onion, thinly sliced
– 1 bell pepper, thinly sliced
– 2-3 green chilies, slit
– 2 tablespoons oil
– 1 tablespoon ginger-garlic paste
– 1 tablespoon soy sauce
– 1 tablespoon tomato ketchup
– 1 tablespoon red chili sauce
– 1 teaspoon vinegar
– 1/2 teaspoon sugar
– Salt to taste
– A pinch of black pepper
– Spring onions for garnish

Instructions:
1. Start by soaking the soya chunks in hot water for about 10-15 minutes or until they become soft. Drain the water and squeeze out any excess moisture from the soya chunks. Set aside.

2. In a pan, heat oil and sauté the sliced onions, bell pepper, and green chilies until they become slightly tender.

3. Add the ginger-garlic paste to the pan and sauté for another minute until fragrant.

4. Next, add the soya chunks to the pan and stir well so that they are coated with the onion and pepper mixture.

5. In a small bowl, mix together soy sauce, tomato ketchup, red chili sauce, vinegar, sugar, salt, and black pepper. Pour this mixture into the pan with the soya chunks and stir well to combine everything.

6. Cook the dish on medium heat for about 5-7 minutes or until the flavors meld together and the soya chunks are fully cooked.
