Ingredients for Spice Eats Home Chicken Curry:

(Tsp- Teaspoon; Tbsp- Tablespoon )

– Chicken – 1 Kg (with bones)

For Marination:
– Turmeric powder- 3/4 tsp
– Red Chilli Powder- 3 tsp
– Salt- 2 tsp

Whole spices: (lightly crushed)
– Cloves-4
– Green Cardamom-4
– Cinnamon-2
– Peppercorns-6

Spice Powders:
– Coriander powder- 2.5 tsp
– Cumin Powder- 3/4 tsp
– Kashmiri Chilli Powder-2 tsp
– Garam Masala Powder-1/2 tsp

Other Ingredients:
– Crushed fried onions- 3 medium (net 250 gms)
– Ginger garlic paste- 3.5 tsp
– Coconut milk – 200 ml
– Green chillies, cut and slit-2-3
– Oil-4-5 tbsp
– Coriander leaves- 2-3 tbsp

Preparation:

– Marinate the chicken pieces with the items indicated above. Mix & set aside for 30 mins
– Slice the onions & fry in oil till golden.
– Cut the green chillies & chop the coriander leaves.

Process:

– Heat oil in a kadhai and add the marinated chicken pieces. Also add the roughly crushed (or whole if not prefer crushed) garam masala.
– Mix and sear on high heat for around 5 mins.
– Add the ginger garlic paste and the coriander and cumin powders, mix and continue to sear on medium heat for another 5 mins.
– Add the Kashmiri Chilli powder and the crushed fried onions, mix and fry on medium heat for another 4-5 mins till colour changes and oil separates.
– Now add the coconut milk , 200-250 ml water and give a mix. Also add slit green chillies and cover & cook on low heat for around 15 mins.
– Remove lid, add the Garam Masala powder and mix. Simmer for around 2-3 mins.
– Garnish with chopped coriander leaves, give a mix and simmer for another 2 mins till done.
