CREAMY TORTILLA SOUP
INGREDIENTS:
1 large red onion, peeled and left whole
4 cloves garlic
2 14.5-ounce cans Muir Glen fire-roasted tomatoes, salt-free
2 cups water
1½ teaspoons mild salt-free chili powder
1½ teaspoons SMOKED paprika
1½ teaspoons oregano
½ teaspoon chipotle powder
6 small corn tortillas (oil- and salt-free, made from just corn or corn and lime)
PREPARATION:
Place all ingredients in an Instant Pot pressure cooker and cook on high pressure for 10 minutes. Release pressure and blend with an immersion blender until smooth. Garnish with chopped scallions and baked tortilla strips if desired. Serve with lime wedges to squeeze on top.
