FALL WARMING BREAKFAST RECIPES – Potato & vegetable hash, Quinoa & oat porridge


Potato & Vegetable Hash (serves 2):

2 small potatoes
1 red pepper
1 courgette
2 garlic cloves
1/2 tsp. garlic powder
1/2 tsp. cumin seeds
1/3 tsp. smoked paprika
1 tsp. mixed dried herbs
sea salt & black pepper

Quinoa & Oat Porridge (serves 1):

1/2 cup cooked quinoa
1/2 cup soaked oats
3/4 coconut milk/ water
1 tsp. cinnamon
1 tsp. sweetener of choice
1/2 cinnamon stick

Ginger cinnamon apples
2 apples
1 tsp. cinnamon
1 cm thumb ginger
1 tbsp coconut oil

Spinach & Mushroom Dukkah spiced baked eggs (serves 2):

1 shallot
2 garlic cloves
200g greens of choice
150g mushrooms
3-4 eggs
1 tbsp. dukkah spice
1 tsp. tamari
sea salt & black pepper
olive oil
