Chipotle Chilli Powder – 2 tsp
Cumin Powder – 1 tsp
Garlic Powder – 1 tsp
Salt – to taste
Black Pepper Powder – 1/4 tsp
Dried Oregano – 1 tsp
For the Grilled Paneer or Tofu:
Paneer or Tofu – 150 gm
Chipotle Spice Mix
Oil – 3 tsp
Cherry Tomatoes – 8 to 10
For the Lime Coriander Rice:
Cooked Rice (Salted) – 2.5 cup
Lime Juice – 2 tsp
Coriander or Cilantro – 3 tsp
For Black Beans & Tomato Mix:
Boiled Black Beans or Kidney Beans (Salted) – 1 cup
Chopped Tomatoes – 2 tsp
Salt – to taste
Black Pepper Powder – 1/4 tsp
For Corn Jalapeno Salsa:
Boiled Corn – 1/2 cup
Chopped Onion – 3 tsp
Pickled Jalapeno – 2 tsp
Salt – to taste
Black Pepper Powder – 1/4 tsp
