Instant Pot Custard Recipe

Heat milk until steaming in the Instant Pot using sauté function. Turn Instant Pot off. Add sugar and pinch of salt to milk. Mix until sugar is dissolved. Pour into a cup with a spout.
Beat eggs in a bowl. Add a little milk to the eggs and mix well. Stream in remaining milk while whisking. Strain using a fine mesh sieve. Add vanilla extract and mix. Pour into ramekins.
Wash and dry Pot. Place trivet in pot. Add water. Place ramekins on top of rack, stacking them. You can fit 4 on the bottom. Cover, seal and pressure cook on low pressure for one minute. Turn off unit and let sit for 10 minutes. Release any remaining pressure and open lid. Using tongs, remove ramekins from pot. Serve hot or cold. If serving cold, leave ramekins out for 30 minutes until room temperature. Chill for a few hours.
It’s best to place hot ramekins in ice water to stop further cooking after removing from Instant Pot.
Ingredients: 2 cups milk, ½ cup sugar, pinch of salt, 3 large eggs, ½ tsp vanilla extract.
