Kaldereta or Caldereta is a meat stew from the Philippines. Commonly, goat meat or mutton is used but beef, chicken, duck can also be used. The meat is stewed in Coconut milk and tomato sauce with veggies like potato, carrots, bell pepper, olives & hot peppers. It is usually spicy.
Caldereta’s name is derived from the Spanish word caldera meaning cauldron. The dish is similar to meat stews from the Iberian Peninsula and was brought to the Philippines by the Spaniards during their 300-year occupation in the Philippines.

The dish I made is just simple variations which is easy to cook at home.

INGREDIENTS
500 grams Chicken
1 & Β½ cup Coconut milk (fresh is better)
Β½ cup Tomato sauce
1/3 cup Soy Sauce
1 tbsp Vinegar
1/3 cup Oil
3 cloves Garlic
1 med Onion
1 tsp Ginger
1 carrots, cubed
2 Potato, cubed
Bell Pepper
3-5 Hot peppers
1tbsp Fish Sauce
Salt & Pepper
