Step 1- Instant pot Rajma Masala:
Ingredients Required:
Oil, 1 Tablespoon
Butter- 1 tbsp (optional)
Cumin Seeds, 1 teaspoon
Whole masala ( bay leaf, black cardamom. Pepper, clove, cinnamon stick)
Ginger Garlic paste, 2 Tablespoons
Kashmiri Red chili powder, 1 Tablespoon
Red chili powder- 1 tsp
Green chilli- 2, chopped
Garam Masala Powder, 1 teaspoon
Salt, as per taste
Coriander Powder, 1 Tablespoon
Turmeric powder- ½ tsp
Dried Fenugreek Leaves/Kasoori Methi- 1 tbsp
Amchur powder- 1 tbsp
Onion, one medium-sized, diced
Tomato puree, 2, medium-sized,
Lemon juice- 1 tbsp
Cilantro, chopped- 1 tbsp
Red Kidney Beans, 2 cups, soaked in water for 30 mins.
Water- 3 cups
Steps:
1.Set Instant Pot to ‘Saute’ mode. Wait for the liner to heat up and then add oil.
2.Add whole spices & cumin seeds and once they splutter, add onions. Add salt to help onions cook faster.
3.Saute onions till they are translucent. Add Turmeric and ginger garlic paste. Saute till the raw smell of ginger and garlic is gone.
4.Add tomato puree. Then add chili powder and coriander powder. Mix well and cook tomatoes for 4-5 minutes.
5.Add 2 cup rajma beans ( 30 minutes soaked in water) into the liner. Add 3 cups of water.
6.Set IP to ‘PressureCook’ mode and set the timer to 50 minutes. Make sure to whistle in sealing mode.
7.Let pressure Release naturally.
8. Open the lid, and set IP to saute mode.
9.Add lemon juice & cilantro chopped. Mix well. Turn off IP when desired consistency is reached.
Notes:
1.Serve hot over rice, or with Rotis/ naan.
2.Raita or Yogurt can be served alongside Rajma.
Step 2- Instant pot Jeera rice
Ingridients_
Basmati rice- 1 cup
Water- 1.5 cup
Bay leaf- 1
Black Cardamom- 1
Green Cardamom- 2
Cumin seeds- 1 tbsp
Cilantro, chopped- 1 tbsp
Ghee/oil- 1 tbsp
Method-
1.Turn on Saute Mode and add the ghee/ oil.
2 Once the oil is hot, add the cumin seeds, green cardamom, black cardamom, & bay leaf & fry for 30 seconds.
3 Now add 1 cup of rice & add 1.5 cups of water. Give it a stir.
4 Close the lid, turn on Manual mode/ Pressure cook, and set the timer to 5 minutes. Make sure the whistle is in Sealing Mode.
5 Do a Quick Release, wait for the safety valve to drop, and open the lid carefully.
Jeera rice ready & Serve Hot!
