The ultimate chicken quesadilla recipe! These chicken quesadillas are loaded with gooey melted cheese and a flavourful, fajita-style chicken and bell pepper. Delicious Mexican comfort food that everyone will go crazy for!
Cheesy chicken quesadillas can be made with little preparation and taste delicious alongside some homemade salsa or guacamole or even the classic Pico de Gallo to really take them over the top. Use this chicken quesadilla recipe for the perfect authentic taste to your Mexican buffet!
Ingredients
500g Chicken
1 tsp Chilli Powder
1 tsp Paprika
1 tsp Black Pepper
1 tsp Salt
1 tsp Dried Oregano
1 tsp Garlic Paste
1 tsp Cumin Powder
4 tbsp Oil
1 Onion
1 Bell Pepper
1 Tomato
1 tbsp Tomato Purée
2 Tortillas
Mozzarella Cheese
Method
1. Cut the chicken into small bite-size pieces and add into a bowl
2. Add the chilli powder, paprika, black pepper, salt, dried oregano, garlic paste and cumin powder
3. Mix until fully incorporated
4. In a pan heat up 2 tbsp the oil
5. Add the marinated chicken and cook on medium heat for 6-8 minutes
6. Add the finely diced onion and bell pepper
7. Cook on medium heat for a further 4-5 minutes
8. Add the finely diced tomato and cook for 2-3 minutes
9. Add the tomato purée and cook for a further 2-3 minutes on medium heat
10. In a griddle pan baste using oil
11. On low heat add a single tortilla
12. Add mozzarella cheese on top of the tortilla
13. Add then the chicken mixture on top
14. Top with the remaining cheese and cover with another tortilla
15. Increase heat to medium and cook for 3-4 minutes on one side
16. Baste the top of the tortilla and flip over then cook for another 3-4 minutes
17. Serve alongside a dip of homemade salsa, a side of yellow rice and enjoy!
