+ CRANBERRY WALNUT SWEET POTATO ROUNDS +
(BY TIDYMOM.NET)
VEGETARIAN / SERVES 6-8
1 ORANGE (FRESH ZEST)
1 FRESH ROSEMARY
2 LONG SWEET POTATOES
1 TBSP BALSAMIC VINEGAR
1/4 CUP CRANBERRY SAUCE
3 TBSP HONEY
1 TSP KOSHER SALT
1/2 TSP PEPPER (FRESHLY GROUND)
2 TBSP OLIVE OIL
1/4 CUP WALNUTS
1/3 CUP GOAT CHEESE
PRE-HEAT OVEN TO 425 DEGREES, SLICE POTATOES IN TO HALV IN ROUNDS. COMBINE ORANGE ZEST , OLIVE OIL, SALT AND PEPPER IN MEDIUM SIZED BOWL AND COAT POTATOES. THEN PLACE POTATOES ON BAKING SHEET, NOT TOUCHING.
PLACE BAKING SHEET IN OVEN AND ROAST FOR 10 MIN. THEN REMOVE FROM HEAT, FLIP THEM OVER AND ROAST FOR 10 MORE MINUTES.
TRANSFER TO SERVING TRAY AND TOP WITH CRANBERRY, GOAT CHEESE AND WALNUTS. MIX HONEY AND BALSAMIC VINEGAR AND DRIZLE ON TOP. GARNISH WITH FRESH ROSEMARY!

+ BASIL, BACON, PEACH BAKED BRIE +
(BY LEIGH ANNE WILKES: YOUR HOMEBASED MOM)
2 SLICES OF BACON (THICK SLICED)
2 TBSP FRESH BASIL
1 EGG
1/4 CUP PEACH JAM
1 SHEET PUFF PASTRY
1 8OZ BRIE ROUND
SERVE WITH CRACKERS, BREAD OR CROSTINI
PRE-HEAT OVEN TO 375 DEGREES AND TAKE PUFF PASTRY OUT OF REFRIGERATOR. COOK 2 SLICS OF BACON AND CHOP. CHOP BASIL. LAY PUFF PASTRY OUT AND ADD BRIE ROUND TO CENTER. ADD PEACH JAM, BACON AND BASIL. WRAP PUFF PASTRY UP AROUND BRIE, CREATING PLEATS AND PINCH AT TOP TO SECURE. BEAT ON EGG AND BRUSH THE WAS OVER THE PUFF PASTRY.
PLACE ON BAKING TRAY AND BAKE FOR 20 MIN. GARNISH WITH FRESH BASIL LEAVES.

+ WHIPPED GOAT CHEESE AND BLUEBERRY BALSAMIC CROSTINI +
(BY THE NOSHERY BLOG)
SERVES 12
10 OZ BLUEBERRIES
1 GARLIC CLOVE
1 LEMON FOR FOR JUICE AND FRESH ZEST
1 TBSP FRSH THYME
1 TBSP LEMON JUICE
1 TSP SALT
12 1/2 INCH, FRENCH BREAD SLICES
4 TBSP BUTTER
8OZ GOAT CHEESE
1/2 CUP HEAVY WHIPPING CREAM
BALSAMIC REDUCTION
COMBINE GOAT CHEESE, SALT AND HEAVY WHIPPING CREAM AND WHIP WITH ELECTRIC MIXURE UNTIL SMOOTH.
COMBINE BLUEBERRIES, FRESH THYME, LEMON ZEST AND LEMON JUICE, STIR. THEN COAT MIXTURE IN BALSAMIC VINEGAR.
CHOP GARLIC AND ADD TO MELTED BUTTER.
BRUSH BUTTER TO BOTH SIDES OF BREAD SLICES AND LAY IN SKILLET ON MEDIUM HIGH HEAT. FLIP ONCE THEY ARE GOLDEN BROWN ON BOTH SIDES AN REMOVE FROM HEAT.
SPREAD GOAT CHEESE MIXTURE ON BREAD, ADD BLUEBERRIES AND GARNISH WITH FRESH THYME!
