Baking sweet potatoes in a pressure cooker is really simple and takes less time then baking them in an oven.
1. Place sweet potatoes in the pot along with at least 1 cup of water.
2. **Be sure to read the instructions for your pressure cooker** Set to high pressure. Select manual pressure button and adjust time to 15-20 minutes. The larger the potatoes the more time it will take. 15 minutes was enough for the small potatoes I used. The larger one would need 17 minutes.
3. When it is done cooking, do a quick release on the pressure.
