Street Food Recipe | Korean Fried Chicken | Delicious Crispy Chicken and Rice Cakes

2 to 2 1/2 lbs (1 to 1 1/2 kg) chicken wings
1/2 tsp (2 3/4 g) salt
1/2 tsp (2 1/2 g) ground ginger powder
1/2 tsp (2 1/2 g) fine Korean red pepper powder
1 tsp (3 g) garlic powder
1 tsp (3 g) onion powder
1/4 cup (59 ml) rice wine or buttermilk (I actually used Korean sake, but soju works too )
*Rice cakes are optional*
1/2 cup (65 g) potato starch (or corn starch)
1/2 cup (65 g) all purpose flour
1/2 tsp (2.5) salt
1/2 tsp (1 g) sugar
1/2 tsp (2.5 g) ground ginger powder
1 /2tsp (2.5 g) fine Korean red pepper powder
1 tsp (3 g) granulated garlic powder
1 tsp (3 g) granulated onion powder
5 fl oz (145 ml) cold water
