Mixed Veg Pancakes

Full of protein and vitamins, are meant to be eaten any time of the day and is especially very good for kids who don’t eat veggies. You can alter the recipe with choice of your veggies.

Ingredients :
Finely chopped Spinach
Vegetables cut into juliennes
(Onion, Red Bell Pepper, Carrot, Zucchini & Cabbage)
Boiled Sweetcorn
Finely chopped Green Chillies
Salt as per taste
1/2 tsp Turmeric Powder (Haldi)
Pinch of Asafoetida Powder (Hing)
1/2 tsp Carrom Seeds (Ajwain)
1 cup Gram Flour (Besan)
2 tbs Rice Flour
Approx 1/4 cup Water
Oil

Method :
In a mixing bowl, take all veggies cut into juliennes
(Onion, Red Bell Pepper, Carrot, Zucchini & Cabbage)
Add Boiled Sweetcorn
Add finely chopped Spinach
Add finely chopped Green Chillies
Add Salt as per taste
Add 1/2 tsp Turmeric Powder (Haldi)
Add a pinch of Asafoetida Powder (Hing)
Add 1/2 tsp Carrom Seeds (Ajwain)
Add 1 cup Gram Flour (Besan)
Add 2 tbs Rice Flour
Add and mix approx 1/4 cup Water to make semi thick batter
Further heat the pan, grease Oil on it
Add a scoop of batter to make small pancakes
Drizzle some Oil on it
Cook on medium heat until both the sides turn golden-brown
(make more pancakes with the same procedure)
Take them on a serving plate
