It’s Day 4 of my slow cooker Crockpot recipes. Today, I am making slow cooker caldo de pollo. This Mexican-Style chicken soup is perfect for a weeknight meal!
SLOW COOKER BEEF CALDO
INGREDIENTS
3 1/4 lbs bone-in chicken pieces
1 1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 lb cabbages
2 medium to large Russet potatoes
2 ears of corn
5 small to medium carrots
1 to 2 Mexican squash
1 celery stick
1/2 small onion
2 to 3 cloves of garlic
1 1/2 Tbsp tomato chicken bouillon powder
fresh cilantro
1 jalapeno (optional)
5 to 6 cups of water
salt and season to taste
