BIRRIA IN THE INSTANT POT
******* I am giving you the names of some of the ingredients in English and Spanish just in case you can find them at a regular store you can go to a hispanic store and look for some of the ingredients.
I am using this meat
chuck roll o chuck. roast (Diesmillo) this meat has some fat and this helps the birria get a delicious flavor. You can use roast shoulder (Espaldilla) and this meat does not have a lot of fat. So you can use both meats
beef shank with or with out bone. (Chamorro)

The total of 6-8 lbs of meat
I am using the Instant Pot 8 Qt and I added between 3-4 cups of water before adding the sauce (chile)
DRY CHILES
(1)chile pasilla I used only one because I did not want my birria spicy, this Chile sometimes can be sweet or spicy . If is not spicy you can add (2)
(3)Chile guajillo
(3)Chile california
(3)Chile New Mexico
6-8 garlic cloves- the garlic and the onion give the birria a good flavor
(1/2) white onion
(5-6) pieces of black pepper
(5) pieces whole cloves but if you use ground you will need like 1/2 a tsp
( 1 -1/2 Tbs )toasted sesame seeds
(4 )bay leafs you need (2) to blend all the dry ingredients and (2) to use before you start the time in your IP
( 1-Tbs) ground cumin
( 2 Tbsp ) dry oregano
(1) Tbs plus (1/2) tsp Tomillo
( 1/8 tsp )ground cinnamon
( 1/4 tsp )Nutmeg
(1 Tbs plus 1/4 tsp) dry cilantro (Cilantro seco en bola)
(1/4 Cup apple cider )you can add 3 Tbs of Tequila of your choice
(1) Cup of the extra liquid that I used for the chiles/remember you may need less if you are using the tequila.
Knorr suiza costilla jugosa or the regular flavor – res ( 3 Tbs )and you can also add salt to your taste
