Impress your guests this festive season | Diwali Starters/Snack Ideas | 5 Min Mithai recipe

In this video I have not only shared creative snack dishes but also served them in a beautiful way. The Nankhatai recipe that I shared is a traditional take on very famous cookies that we all know of. The kebabs that I have shared are not only vegetarian but also made without using any potatoes, which means it is a super healthy recipe. No festival is complete without a sweet recipe which I why I have shared a 5 minute dish that is melt in your mouth and delicious.

Nankhatai Recipe

1 Cup Maida, 1/2 cup Besan (gram flour), 2tbsp sooji or rava/semolina, 1/2 cup powdered sugar, 1/8tsp salt, 1/2tsp cardamom powder, 1/8tsp freshly grated nutmeg, 1/2 cup ghee (at room temperature or semi solid form), Nuts sliced for topping

Preheat the oven at 180°c for 10 minutes
Mix everything together as shown in the video and make nice dough balls. The warmth from the hands will help melt the ghee and form the dough.
Bake in the oven for 15 to 18 minutes depending on oven to oven
The bottom should be brown and the top part will have some cracks formed that look beautiful. Let the nankhatai cool down on a cooling rack for sometime otherwise it will break apart.

Beetroot Peanut Kebab Recipe

Beetroots – 11/2 to 2, Chana / chickpeas – 1 cup, Peanuts – 1/4 cup, Cumin powder – 1 tsp, Coriander powder – 1 tsp, Chilli powder – 1/2 tsp, Garam masala powder – 1/2 tsp, Haldi/Turmeric powder – 1/4 tsp, Dry mango powder – 1/2 tsp, Asafoetida/Hing – pinch, Besan/Gram flour – 3 tbsp, Corn flour – 1 tbsp, Rava/Semolina – 4 tbsp, Salt – as required, Oil – as required

Soak overnight and then boil chana, boil beetroot separately and keep. Add all the spices and grind everything together. Try and avoid adding water. Add only a splash if really needed. After grinding add besan/gram flour and crushed roasted peanuts to it. Form cutlets and coat with rava/semolina in the end. Deep fry/ Air Fry/ pan fry them. Make sure in panfrying they are cooked thoroughly as the besan added might give a raw taste.

Coconut Barfi
* 3 cups desiccated coconut
* 400g condensed milk
* ¼ tsp ground cardamom (cardamom powder)
* 2-3 tsp melted ghee

Dry roast coconut for 2 minutes after which add the condensed milk to it. Cook this on a low to medium flame until the entire mixture thickens and starts leaving the sides of the pan. Set this mixture in a square greased tin and later cut into square shapes.

Bread Pizza
Cut bread slices into your desired shape and then top it with pizza sauce, cheese and chopped veggies of your choice. Sprinkle a dash of salt, pepper and oregano. Chilli flakes are optional. Bake them for 5-10 minutes at 160
