Ingredients
Kienyeji (Road Runner Chicken)
1 Kuku kienyeji (road runner chicken) – Hen
1 medium onion sliced
1 tbsp of ginger and garlic paste
4 bay leaves
1 tbsp of tomato paste
3/4 tsp of turmeric powder
1 &1/2 tsp of paprika
1 tsp of salt
1 tsp of freshly ground black pepper
2 tbsp of dark soy sauce
1 cup of chicken stock (simply melt a chicken bouillon/cube in hot water)
1 tbsp of mixed spices (ground cinnamon, ground coriander, ground nutmeg , 2 cardamoms, 1 clove, & ginger powder mix all this to a grinder and blend)
2 tbsps of cooking oil
Cardamom & Bay Leaf Rice
6 Cardamom Pods
4 Bay leaves
1 Cup of Washed Basmati Rice
1 & 1/2 cups of water
2 Tbsps Of Coconut Oil (you can use cooking oil of your choice)
Salt to taste
