Bake at 380 Degrees
30 to 45 minutes
Keep covered with foil for 20 minutes, remove foil and continue to bake until you see your sauce bubbling.
-Makes 1 dozen enchiladas
Ingredients
12 corn tortillas
2 to 3 cups Mexican cheese blend
1/2 chopped onion
4 cups Views enchilada sauce
Enchilada sauce Ingredients
2 to 3 Tbsp oil
1/2 cup Views chili powder
4 cups of chicken broth or water
1/2 can tomato sauce (4oz)
2 Tbsp Knorr chicken bouillon (Adjust to taste if using chicken broth)
This recipe can be easily doubled. Just double quantities
Views chili powder
1 pound of guajillo chili powder
-to fully dry chiles. Place chiles in a baking dish in 250 degrees oven. Turning them every 5 minutes until you achieve the desired dryness to blend. Should take 15 to 18 minutes
-Make the double suggested amount of enchilada sauce for 2 dozens
-Meal prep tray- Freeze 12 Enchiladas, 1 1/2 cups cheese, 2 cups of enchilada sauce.
Fully thaw enchilada frozen dish. Bake at 320 degrees as suggested in the video
