Ingredients :

Brinjal – 1 lb ( cut into 4 sections lengthwise without cutting off stem )
Onion – 1
Tomatoes – 2 (medium size)
Tamarind – Lemon size ( Add Water and Extract the juice )

To make Peanut , Sesame seed powder
Peanuts – 3 Tablespoons
Sesame Seeds – 2 Tablespoons
Dried Coconut Powder – 2 Tablespoons
Dry Roast Peanuts in Pan , Switch off the flame then add dried coconut powder and sesame seeds
Cool down and blend in to powder ( keep aside)

* On Saute

Add :
Oil – 2 Tablespoons
Brinjals
Saute 2 minutes
Take out and keep aside
Add :
Onions
Saute till onions turn light brown
Ginger garlic paste – 1 Teaspoon
Tomatoes
Cook Tomatoes for 5 minutes ( or) till they are mushy
* Cancel Saute
Blend Onion & Tomato Mixture into smooth paste.

Again ,
On Saute
Add :
Mustard seeds – 1 Teaspoon
Methi Seeds – 1/4 Teaspoon
Dried Red Chillies – 1
Curry Leaves (Optional)
When Mustard seeds splutter,
Add :
Onion & Tomato Paste
Turmeric Powder – 1/2 Teaspoon
Coriander Powder – 1 Teaspoon
Cumin Powder – 1/2 Teaspoon
Chili powder – 2 Teaspoon ( Used Kashmiri chili pwd)
Garam Masala Powder – 1/4 Teaspoon
Tamarind Extract
Jaggery – 1 Teaspoon
Salt
Water – 2 Cups
Mix Well
Add :
Brinjals
Mix Well
* Cancel Saute
* Close the lid and seal

* On Manual – 5 minutes
Pressure – HIGH
Release – Quick Release

Open and Add Coriander Leaves

Serve with Biryani, Roti , White rice , Jeera rice.
